Berwick Edge was created by Margaret-Ann and her brother Neill Maxwell in 1993. Inspired by Dutch Gouda, it has a slightly harder texture and a fruity flavour with a long after taste. Like all the cheeses in the hampers, each one is hand made and takes an entire day to craft, it is then matured in clean Northumberland air for between 12 and 14 months to develop its full flavour. Earlier this year, it was voted the top cheese made from unpasteurised milk and awarded the prestigious James Aldridge Memorial Trophy as being the best of the 21 cheeses tasted by the judges on the day.
